Valli Unite is a tiny co-op in the NW hills of Piedmont who espouse the 'one farm' approach. Their wines are rustic and fun – this a white wine is a blend of Cortese (the grape of Gavi) and Timorasso (an indigenous white grape), is unfiltered and unfined. Think yellow plums – skins and all – and wild herbs.
