Savagnin Ouille, Guillaume Overnoy Cotes-du-Jura
Giullaume's take on a ouillé style Jura wine, meaning the maturation barrels were filled to the brim and constantly topped us as the liquid evaporates, producing a clean, elegant and mineral-driven wine without the oxidative notes of a Vin Jaune. To make it, Savagnin grapes from three plots were harvested in 2019 and fermented naturally, with the wine aging for three years on its lees in large, old oak barrels, before being bottled unfiltered, unfined, and without the use of sulphur. The finished product reveals a rare intensity and power, with a deep golden colour and rich aromatic bouquet of white fruits such as pear and apple, dried apricot, hazelnut and almond, along with background flinty and stoney notes. On the palate it is dense and structured with an umami-loaded mouthfeel and layer-upon-layer of spiced and mineral-driven flavours, complemented nicely by the high acidity and long, persistent finish. A great gastronomic wine that will drink nicely from now and over the next 20 years.
Grand-nephew of the legendary Pierre Overnoy, Guillaume took over the estate in 2014 at the age of just 21, after his father had himself converted the family polyculture farm to winemaking in the early '80s. Guillaume tends to just 5.5ha of vines scattered amongst the varied soils of the Jura, trying to work as naturally as possible in accordance with organic principles, and preferring lengthy lees aging in his underground cellar (a minimum of two years for the whites, one year for the reds) rather than heavy usage of sulphites. He cultivates Chardonnay and Savagnin for the whites, alongside Trousseau, Pinot Noir, and Poulsard for the reds, all of which enjoy a variety of terroirs and produce wines that are remarkable in their purity, fruitiness, and tautness. A rising star to be watched very closely.
