The only Burgundy AOC that allows Sauvignon Blanc in the wines, this is a great option for Chablis and Sancerre lovers. The wine has aromas of green apple, citrus and stone fruits, with a slight honeyed note shining through. It goes through malolactic conversion and spends an extended time on its lees, both of which add body and a buttery pastry vibe on the finish, but there is no oak involved in the process, which allows the clean, saline minerality to take centre stage. Tastes like a Chablis, without the price tag to match.
Based in the region of Saint-Bris, just a few kilometres southwest of Chablis, Guilhem & father Jean-Hugues Goisot are crafting some of the best value wines coming out of Burgundy at the moment. The wines are made only from the grapes cultivated on the estate, which has been in the family since the 14th Century, and are vinified and matured in their cellar which dates back to the 11th Century. Jean-Hugues was one of the earliest Burgundy producers to convert to biodynamic practices, and emphasises natural production techniques that keep the ecosystem healthy.
