A proper chardonnay to rival the best from Burgundy. Without the oppressive rules of the French winemaking legislature, Jaroslav has been free to try out different experimental techniques to produce wine of astonishing quality. This one is a blend of 3 different vintages, 2017, 2018 and 2019 - which mature for between 18-48 months, before being blended together judiciously. The wine has great structure from the time spent in oak, with woody, toasty notes along with flavours of honeycomb, pastries and a salty minerality akin to a Chablis. Along with this it has surprisingly high acidity which adds an additional dimension to this complex beast. Beautiful expression of the Velké Bílovice terroir, and one that will drink well over the next 10 years. 

Jaroslav Osička runs a small family winery in Velké Bílovice, near the borders of Austria and Slovakia. A core part of the Czech wine scene, he's an instructor at a local wine school where he encourages his students to follow in his footsteps and prioritise biodiversity and organic farming, which Jaroslav has been practicing since the late 80s. He abstains from using synthetic treatments, pesticides and herbicides, employing organic preparations and natural fertilisers instead. Winemaking is done as naturally as possible - spontaneous fermentations and aging in oak without the use of sulphur, along with no fining or filtration. Anything artificial or foreign is eschewed, allowing the wines to embody the true essence of the grapes and terroir.
