BIODYNAMIC / VEGAN / LOW SULPHITE / NATURAL

On the nose, this frizzante boasts a yeasty aroma, bright apple and lemon fruitiness, and an underlying minerality. On the palate, expect oxidised apple flavours and citrus notes that are balanced with light tannins and brilliant acidity, culminating in a long and refreshing finish. A great expression of the famous Emilia-Romagna terroir, made from the indigenous Pignoletto grape. After fermentation in vat, a small amount of must is added to the bottle for the second fermentation, creating a natural effervescence. 

Federico Orsi's biodynamic farm is located in Colli Bolognesi, a beautiful area just outside Bologna with a history of producing excellent wines. After purchasing the land and converting it to biodynamics, Federico committed himself to put the region back on the map. He embraces diversity and produces vegetables for local restaurants as well as making delicious Mortadella from his Mora Romagnola pigs that freely roam the farm. In the cantina, Federico is constantly experimenting with different fermentation vessels and vinification styles with the goal of creating honest, delicious wines that represent the terroir.
